Cilantro Lime Dressing
1 cup packed Cilantro
½ cup extra-virgin olive oil
½ cup lime juice
½ tsp salt
½ tsp pepper
Pinch of minced garlic
Puree all ingredients in a blender or food processor until smooth.
If only making for 1 person, ½ the recipe because it does not keep after 2 days.
· You can modify the recipe by substituting ¼ cup lime juice and ¼ cup orange juice for the ½ cup lime juice.
· You can thicken by adding ½ tsp of tapioca flour.
· Try omitting the garlic and pepper and adding a tiny scoop of Pure Stevia (www.drmarinajohnsonstore.com) extract instead.
